Jimmy Dean Low Fat Breakfast Burrito

Ingredients:

  1. 1/4 cup Jimmy Dean Reduced Fat Pork Sausage (browned, drained, and chopped)
  2. 1 whole wheat flour tortilla (10–12 in.)
  3. 2 egg whites
  4. 1 whole egg
  5. 1/8 cup low-fat cheddar or part-skim mozzarella, shredded
  6. 3 tablespoons pico de gallo
  7. 4 slices fresh avocado
  8. 2 tablespoons black bean purée (optional)
  9. Shredded lettuce
  10. Salt
  11. Pepper
  12. Non-stick cooking spray

Directions:

  1. Warm tortilla in microwave for approximately 15 seconds
  2. Whisk together egg and egg whites in a small bowl
  3. In an 8-inch skillet that has been sprayed with nonstick cooking spray, pour egg mixture and scramble. Season with salt and pepper and put aside
  4. On first third of tortilla, spread a thick layer of black bean purée
  5. Next, layer on the scrambled eggs
  6. Place the sausage on top of the scrambled eggs
  7. Then layer on the pico de gallo, lettuce, and avocado
  8. Sprinkle with cheese
  9. Fold together
  10. Top with sour cream

Makes 1 burrito
