Jimmy Dean Sausage Stuffing

Ingredients:

  1. 2 pkgs. (16 oz. each) Regular Flavor Jimmy Dean Pork Sausage
  2. 8 oz. fresh mushrooms, sliced
  3. 1-1/2 cups diced onion
  4. 3/4 cup diced or coarsely grated carrots
  5. 1-1/2 cups diced celery
  6. 3 garlic cloves, minced
  7. 1 pkg. (10 oz.) frozen spinach, thawed and drained
  8. 2 teaspoons dried rosemary
  9. 2 teaspoons poultry seasoning
  10. 1 teaspoon black pepper
  11. 1 pkg. (15 oz.) herbed dry bread cubes
  12. 2 cups chicken broth
  13. 1 egg, lightly beaten

Directions:

Preheat oven to 325 F. In a large saucepan or stockpot, cook sausage over medium-high heat, stirring frequently until thoroughly cooked and no longer pink. Add mushrooms, onion, carrots, celery and garlic; cook 10-12 minutes or until onion is translucent, stirring frequently. Transfer mixture to a large bowl; add remaining ingredients and stir well. Pour into a buttered 4-quart casserole. Bake covered for 60 minutes.

Makes 10-12 servings

I have been making this recipe for years and is a family favorite!  We are going to someone else's house this year, and my family STILL wants the stuffing to be made for us later.  Highly recommend this recipe - easy to make, healthy and full of flavor!

This dish had too much flavor.  It was the sage in the sausage.  Stuffing is suppose to be a side dish to turkey but it was a meal unto itself and was too overpowering.  The next time I cook this, it will be with just the Regular Jimmy Dean Sausage (not the sage) and 1/2 teaspoon on the poultry seasoning.  I/We did love all the vegetables that were in the recipe.
