Jimmy Dean Breakfast Salsa

Ingredients:

  1. 9 slices Jimmy Dean Fully Cooked Premium Precooked Bacon, heated according to package directions and diced
  2. 1 tablespoon olive oil
  3. 1/2 small red onion, finely chopped
  4. 1/2 chipotle chile in adobo sauce, minced
  5. 2 small cloves garlic, minced
  6. 1 can (15 oz.) tomato sauce
  7. 2 small ripe tomatoes (about 3/4 pound), seeded and finely chopped
  8. 1/4 teaspoon black pepper, or to taste

Directions:

Heat oil, onion and pepper in a saucepan over medium heat, stirring frequently until onion is translucent. Add garlic and tomato sauce; bring to a simmer and cook uncovered for 3 minutes. Stir in tomatoes and bacon; remove from heat and season to taste with pepper. Serve over eggs, potatoes or breakfast burritos.

Serving size:

Makes about 3 cups
