Ingredients:
- 1 pkg. Regular Flavor Jimmy Dean Pork Sausage, cooked, crumbled and drained
- 1 can (15 oz.) sweet corn, drained
- 1/2 cup finely chopped sweet red pepper
- 3/4 cup finely chopped onion
- 1 cup shredded cheddar cheese
- 1 teaspoon black pepper
- 2 pkgs. (8.5 oz. each) cornbread mix
Directions:
Preheat oven to 400 F. In large bowl combine cooked sausage, corn, onion, red pepper, cheese and black pepper; mix well and set aside. In a separate bowl, prepare cornbread mix as directed on package. Fold sausage mixture into prepared batter, stirring briefly to blend well. Spoon batter into lightly oiled muffin cups, filling 3/4 full. Bake 15 minutes or until golden brown.
