Watching fat doesn't mean you have to skimp on taste. Enjoy the flavor of Mexican in the morning with this easy-to-eat breakfast burrito recipe featuring Jimmy Dean® Reduced-Fat Pork Sausage, scrambled eggs, pico de gallo, cheddar cheese, and avocado. Que bueno!
Ingredients
- 1/4 cup Jimmy Dean® Reduced Fat Pork Sausage (browned, drained, and chopped)
1 whole wheat flour tortilla (10–12 in.)
2 egg whites
1 whole egg
1/8 cup low-fat cheddar or part-skim mozzarella, shredded
3 tablespoons pico de gallo
4 slices fresh avocado
2 tablespoons black bean purée (optional)
Shredded lettuce
Salt
Pepper
Non-stick cooking spray
Directions
Warm tortilla in microwave for approximately 15 seconds
Whisk together egg and egg whites in a small bowl
In an 8-inch skillet that has been sprayed with nonstick cooking spray, pour egg mixture and scramble. Season with salt and pepper and put aside
On first third of tortilla, spread a thick layer of black bean purée
Next, layer on the scrambled eggs
Place the sausage on top of the scrambled eggs
Then layer on the pico de gallo, lettuce, and avocado
Sprinkle with cheese
Fold together
Top with sour cream
