Mediterranean Sausage Strudel

Frozen phyllo dough makes the perfect flaky crust for this showstopping strudel filled with Jimmy Dean® Hot Pork Sausage, sun-dried tomatoes and feta cheese.

Ingredients

  • Sauce:
  • ½ cup mayonnaise
  • 1-½ teaspoons lemon zest
  • 1 tablespoon fresh lemon juice
  • 1 garlic clove, minced
  • Strudel:
  • 1 pkg. Jimmy Dean® Hot Pork Sausage Roll
  • 1 tablespoon finely chopped onion
  • 2 garlic cloves, minced
  • ½ cup chopped sun-dried tomatoes in oil, drained, patted dry
  • 2 tablespoons chopped Spanish olives with pimiento
  • ½ cup chopped fresh parsley
  • 1/3 cup crumbled feta cheese
  • 1 egg, beaten
  • 12 sheets frozen phyllo, thawed

Directions

Sauce:

1. Mix ingredients in small bowl until well blended; cover. Refrigerate until ready to serve.

Strudel:

2. Preheat oven to 350°F. Cook sausage in large skillet over medium-high heat 2 minutes. Add onion and garlic; cook 6-8 minutes or until sausage is thoroughly cooked, stirring frequently. Drain; return to skillet. Stir in tomatoes and olives; cool slightly. Add parsley, cheese and egg, mix well.

3. Stack 6 phyllo sheets on work surface, spraying cooking spray between each layer. Repeat with remaining 6 phyllo sheets to make second stack.

4. Spoon half the sausage mixture onto each phyllo stack; spread to within 1½ inches of edges. Fold over both short sides of each phyllo stack slightly, then roll up. Place, seam-sides down, in shallow baking pan. Make 4 (1/2-inch-deep) diagonal cuts in top of each strudel.

5. Bake 28-33 minutes or until golden brown. Let stand 5 minutes before cutting each strudel into 5 slices. Serve with sauce.

Makes: 10 servings (1 strudel slice and 1 Tbsp. sauce each)
