Mexican Rice with Sausage

This south-of-the-border rice dish, flavored with Jimmy Dean® Pork Sausage, canned tomatoes, black beans, corn and green onions, is the perfect addition to any Southwestern or Mexican meal.

Ingredients

  • 1 pkg. Jimmy Dean® Regular Flavor Pork Sausage Roll
  • ½ cup chopped yellow onion
  • 2 cups frozen whole kernel corn
  • 1 can (14-14½ ounces) chicken broth
  • 1 can (10 ounces) diced tomatoes and green chilies, undrained
  • 1 cup uncooked long-grain white rice
  • ½ teaspoon ground cumin
  • ½ teaspoon chili powder
  • ¼ teaspoon salt
  • 1 can (15 ounces) black beans, drained, rinsed
  • 4 green onions, thinly sliced
  • Optional Toppings Sour cream Shredded cheddar cheese Chopped fresh cilantro Lime wedges

Directions

1. Cook sausage and yellow onion in large saucepan over medium-high heat 8-10 minutes or until sausage is thoroughly cooked, stirring frequently; drain. Return sausage mixture to pan.

2. Add corn, broth, tomatoes, rice and seasonings; mix well. Bring to a boil; cover. Reduce heat to low; simmer 25 minutes or until rice is tender.

3. Stir in beans and green onions; cook 1-2 minutes or until thoroughly heated, stirring frequently.

4. Garnish each serving with one or more toppings, if desired. Cooks Tip Substitute 1 ¾ cups homemade chicken broth for the canned broth.
