Sausage and Spinach Manicotti

Cooked Jimmy Dean® Pork Sausage, frozen chopped spinach, ricotta and Parmesan cheese team up to make the perfect filling for the cooked manicotti shells in this hearty Italian dish.

Ingredients

  • 1 pkg. Jimmy Dean® Regular Flavor Pork Sausage Roll
  • 1 pkg. (10 ounces) frozen chopped spinach, thawed, well drained, squeezed dry
  • 1 container (15 ounces) part-skim ricotta cheese
  • ½ cup (2 ounces) grated Parmesan cheese
  • 1 egg, lightly beaten
  • ¼ teaspoon salt
  • ¼ teaspoon ground black pepper
  • 1 jar (24-26 ounces) marinara sauce, divided
  • 1 pkg. (8 ounces) manicotti shells, cooked, drained
  • 1½ cups (6 ounces) shredded mozzarella cheese

Directions

1. Preheat oven to 350°F. Cook sausage in large skillet over medium-high heat 8-10 minutes or until thoroughly cooked, stirring frequently; drain. Return sausage mixture to skillet.

2. Add spinach, ricotta cheese, Parmesan cheese, egg, salt and pepper; mix well.

3. Spread 1 cup marinara sauce onto bottom of 13x9-inch baking dish. Fill each manicotti shell with about ⅓ cup sausage mixture; place in baking dish. Top with remaining marinara sauce and mozzarella cheese; cover.

4. Bake 45 minutes or until thoroughly heated. Let stand 5 minutes before serving.
