Sausage Couscous Croquettes

Take a trip to the Mediterranean with this delicious couscous dish spiced with Jimmy Dean® Regular Flavor Pork Sausage.

Ingredients

  • 1 pkg. Jimmy Dean® Regular Flavor Pork Sausage Roll
  • 1½ cups chicken broth or water
  • 2 teaspoons ground cumin
  • 1 cup uncooked couscous
  • ½ cup finely chopped onion
  • ¼ cup finely chopped fresh parsley
  • 2 eggs, lightly beaten
  • 1/8 teaspoon cayenne pepper
  • ¾ cup seasoned dry bread crumbs
  • Vegetable oil for frying
  • Prepared tzatziki sauce (optional)

Directions

1. Cook sausage in large saucepan over medium-high heat 8-10 minutes or until sausage is thoroughly cooked, stirring frequently; drain. Return to saucepan.

2. Stir in broth and cumin; bring to a boil. Stir in couscous. Remove from heat; cover. Let stand 5 minutes or until liquid is absorbed. Cool slightly.

3. Stir in onion, parsley, eggs and cayenne pepper. Moisten hands with cold water; use to shape sausage mixture into 24 small logs, squeezing lightly to hold together. Roll in bread crumbs.

4. Heat 3 inches of oil in large saucepan, wok or deep fryer to 375°F. Add 4 or 5 croquettes; cook 2-3 minutes or until done (160°F), turning once. Drain on paper towels. Repeat with remaining croquettes. Serve with tzatziki sauce, if desired.

Cook’s Tips: Moisten your hands with water after shaping each croquette to keep the sausage mixture from sticking to your hands. To keep fried croquettes warm, place in a single layer in shallow covered pan in a 275°F oven while frying remaining batches.
