Sausage Pastry Delights

Whether served at an elegant brunch or as part of a family breakfast, these scrambled egg- and sausage-filled puff pastry shells are sure to win raves.

Ingredients

  • 3 pkgs. (10 ounces each) frozen puff pastry shells (18 shells)
  • 3 eggs
  • ¼ cup whipping cream
  • 1 teaspoon chopped fresh dill weed
  • ¼ teaspoon salt
  • 1/8 teaspoon ground black pepper
  • 1 tablespoon butter or margarine
  • ¼ cup chopped red bell pepper
  • 1 pkg. Jimmy Dean® Regular Flavor Pork Sausage Roll, cooked, crumbled, drained
  • 1 cup (4 ounces) shredded cheddar cheese

Directions

1. Bake pastry shells as directed on package. Remove center cutout from each shell; reserve for later use.

2. Beat eggs, cream and seasonings in small bowl with wire whisk until well blended; set aside.

3. Melt butter in large skillet over medium heat. Add red pepper; cook 3-4 minutes or until crisp-tender, stirring occasionally. Add egg mixture; cook until eggs begins to set, stirring frequently.

4. Stir in sausage; cook until egg mixture is completely set and sausage is heated through, stirring frequently.

5. Spoon about ¼ cup egg mixture into each pastry shell. Sprinkle with cheese and parsley; cover with reserved pastry cutouts.

Yield:

Makes: 18 servings (1 pastry shell each).
