Sausage & Rice Jambalaya

It will be like you're having dinner in New Orleans with this delicious jambalaya recipe made even spicier and heartier with Jimmy Dean® Regular Flavor Pork Sausage.

Ingredients

  • 1 pkg. Jimmy Dean® Regular Flavor Pork Sausage Roll
  • ¾ cup coarsely chopped green bell pepper
  • ½ cup chopped onion
  • 2 cloves garlic, minced
  • ½ pound smoked sausage, cut into ¼-inch-thick slices
  • 2 cans (14.5 ounces each) stewed tomatoes, undrained
  • 1 can (15 ounces) black beans, drained, rinsed
  • 1½ cups water
  • 1 teaspoon Cajun seasoning
  • ¼ teaspoon hot pepper sauce
  • 1 bay leaf
  • 1-1/3 cups uncooked instant white rice

Directions

1. Cook roll sausage, green pepper, onion and garlic in large saucepan over medium-high heat 8-10 minutes or until sausage is thoroughly cooked, stirring frequently; drain. Return to pan.

2. Stir in smoked sausage; cook 5 minutes, stirring occasionally. Add all remaining ingredients except rice; stir. Bring to boil. Reduce heat to medium-low; simmer 15 minutes, stirring occasionally.

3. Stir in rice; cover. Simmer 5-10 minutes or until tender. Remove and discard bay leaf before serving.
