Mediterranean Sausage & Spinach Quesadillas

Treat yourself to an enticing mix of flavors with these quesadillas featuring Jimmy Dean® Regular Flavor Pork Sausage, spinach and sun-dried tomatoes.

Ingredients

  • 1 pkg. Jimmy Dean® Regular Flavor Pork Sausage Roll
    4 green onions, thinly sliced
    2 cloves garlic, minced
    1/8 teaspoon crushed red pepper
    2 cups packed baby spinach leaves, coarsely chopped
    6 sun-dried tomatoes packed in oil, chopped
    ¼ cup chopped fresh basil
    8 flour tortillas (6 to 8 inch)
    2 cups (8 ounces) shredded Monterey Jack cheese

Directions

1. Cook sausage, onions, garlic and crushed pepper in large skillet over medium-high heat 8-10 minutes or until sausage is thoroughly cooked, stirring frequently; drain. Return sausage mixture to skillet.

2. Stir in spinach, tomatoes and basil; cook 1-2 minutes or just until spinach is wilted, stirring occasionally.

3. Top 1 tortilla with ¼ cup cheese, ½ cup sausage mixture and additional ¼ cup cheese; cover with second tortilla. Repeat with remaining ingredients to make 4 quesadillas.

4. Cook, one at a time, in lightly greased skillet over medium-high heat 3-4 minutes on each side or until golden brown on both sides. Cut into wedges to serve.
