Sausage-Stuffed Peppers

Add a little color to the dinner table with these zesty peppers stuffed with Regular Flavor Jimmy Dean® Pork Sausage, rice and Parmesan cheese, and slathered in a savory sauce.

Ingredients

  • 1 pkg. Jimmy Dean® Regular Flavor Pork Sausage Roll 1 small onion, chopped ¼ cup uncooked long-grain white rice 1/3 cup (about 1½ ounces) grated Parmesan cheese, divided 1 tablespoon chopped fresh parsley ½ teaspoon black pepper, divided 1 egg 1 can (15 ounces) tomato sauce 1 tablespoon olive oil 2 teaspoons dried oregano ¼ teaspoon salt 4 red, yellow or green bell peppers

Directions

1. Preheat oven to 350ºF. Combine sausage, onion, rice, ¼ cup Parmesan cheese, parsley, ¼ teaspoon black pepper and egg in large bowl. 2. Mix all remaining ingredients except remaining Parmesan cheese and bell peppers; pour into 11x7-inch baking dish. 3. Remove tops from bell peppers; discard tops and seeds. If necessary, cut thin slice from bottom of each pepper so it can stand upright. Stuff peppers with sausage mixture; stand in baking dish. Cover. 4. Bake 50 minutes. Spoon sauce from bottom of dish over peppers; sprinkle with remaining Parmesan cheese. Continue baking 15-20 minutes or until thoroughly heated. Cook’s Tip: Prepare using 1 pkg. Jimmy Dean® Sage Flavor or Hot Pork Sausage Roll.
