Spicy Sausage and Vegetable Fajitas

Take your fajitas up a notch with Jimmy Dean® Pork Sausage. This traditional Tex-Mex recipe can be made in just minutes. Watch Chef Ryan Hutmacher show you how.

Ingredients

  • 1 tablespoon olive oil
  • 1 onion, cut into thin wedges
  • 1 red or green bell pepper, cut into thin strips
  • 1 small jalapeno pepper, finely chopped
  • 1 teaspoon chili powder
  • ½ teaspoon ground cumin
  • Salt and black pepper to taste
  • 1 pkg. Jimmy Dean® Regular Flavor Pork Sausage Roll
  • 2 cups (8 ounces) shredded Mexican blend cheese
  • 8 flour tortillas (6 inch), warmed

Directions

1. Heat oil in medium skillet over medium-high heat. Add onion, peppers and seasonings; cook 8-10 minutes or until vegetables are crisp-tender, stirring occasionally. Remove from skillet; set aside.

2. Add sausage to skillet; cook 8-10 minutes or until thoroughly cooked, stirring frequently. Drain sausage; return to skillet. Add vegetable mixture; cook and stir 1 to 2 minutes or until heated through. Top with cheese.

3. Spoon about ½ cup sausage mixture onto each tortilla; fold in half.

Cook’s Tips: How to Warm Tortillas: Preheat oven to 300ºF. Wrap tortillas in foil. Bake 10 minutes or until thoroughly heated.

Special Extra: Serve topped with salsa and sour cream.

Variation: Prepare using 1 pkg. Jimmy Dean® Pork Sausage Sage Flavor or Hot Pork Sausage Roll.
