Thai Meatball Soup

Jimmy Dean® Pork Sausage adds the perfect flavoring to this satisfying soup - the perfect complement to any meal.

Ingredients

  • 1 container (48 ounces) chicken broth (6 cups)
  • 1 can (13.66 ounces) coconut milk
  • 1 pkg. Jimmy Dean® Regular Flavor Pork Sausage Roll
  • ½ pound lean ground beef
  • ½ cup finely chopped onion
  • 1 egg white, lightly beaten
  • ¼ cup dry bread crumbs
  • 2 tablespoons grated peeled gingerroot
  • 1 tablespoon chopped fresh cilantro
  • 1 tablespoon minced fresh garlic
  • ½ teaspoon crushed red pepper
  • 1 cup sliced fresh mushrooms
  • ½ cup shredded carrot
  • 1 pkg. (9 ounces) baby spinach
  • Optional Toppings
  • Chopped peanuts
  • Toasted flaked coconut

Directions

1. Combine broth and coconut milk in Dutch oven or large saucepan. Bring to a simmer on medium-low heat.

2. Mix sausage, ground beef, onion, egg white, bread crumbs, ginger, cilantro, garlic and crushed pepper in large bowl just until blended. Shape into 1-inch balls.

3. Add meatballs, mushrooms and carrot to broth mixture; simmer on medium-low heat 5 minutes or until meatballs are done (160°F). Add spinach; simmer 2 minutes.

4. Add toppings, if desired.

Yield:

Makes: 8 servings (about 1½ cups each)
