Ingredients:

  1. 2 cups Rice
  2. 1 lb pkg Jimmy Dean Hot Roll Sausage
  3. 1 chopped green pepper
  4. 1 chopped red pepper
  5. 1 chopped large red onion
  6. 2 Tbsp Cajun seasoning
  7. 2 Tbsp fresh cilantro, chopped
  8. 1 small bunch sliced scallions
  9. 1 Pkg wonton wraps
  10. 2 eggs

Remoulade Sauce:

  1. 1 cup mayonnaise
  2. 1/4 cup sour cream
  3. 1/4 cup chopped dill
  4. 1/4 cup chopped pickles
  5. dash ketchup/chili sauce
  6. 1/2 Tbsp Cajun seasoning
  7. 1 Tbsp horseradish

Directions:

Cook rice and allow to cool. Brown sausage in a skillet with vegetables. Drain excess fat. Add seasonings, salt and pepper to taste. When sausage is cool, mix with rice, cilantro and scallions.

While sausage is cooling, make the Remoulade sauce. Mix all ingredients for sauce and allow to chill in the fridge for 15-30 minutes.

For the dirty rolls, make an egg wash with eggs and water. Brush borders of wanton wrapper with egg wash and stuff with 1 Tbsp sausage/rice filling. Roll and wrap like a diaper. Allow to sit for a few minutes and fry in a fry daddy or medium saucepan filled with 2 cups oil. Fry until brown and crisp. Allow to drain on paper towel.

Serve on a bed of lettuce with the sauce in the center as a dip.
