Jimmy Dean Sausage Fiesta Bites

Ingredients:

  1. 1 pkg. Regular Flavor Jimmy Dean Pork Sausage
  2. 1 egg, lightly beaten
  3. 2 tablespoons taco seasoning
  4. 1/4 cup breadcrumbs
  5. 1 can (4.5 oz.) diced green chilies, drained well
  6. 1/4 cup chopped black olives, drained
  7. 1 small tomato, seeded and finely chopped
  8. 4 oz. finely shredded cheddar cheese
  9. 4 green onion tops, sliced thinly (reserve 1 tablespoon for garnish)
  10. 1/2 teaspoon hot sauce (optional)

Directions:

Combine uncooked sausage, egg, taco seasoning and breadcrumbs; mix well. Form into 1-1/4" balls; transfer to ungreased miniature muffin tins. Use thumb or fingers to make a well in the middle of each ball, forming a cup with 1/4" thick sides. Set aside. Preheat oven to 350 F. Combine remaining ingredients; stir well. Fill each sausage cup with cheese mixture. Bake 20 minutes; cool 5 minutes before removing from tins. Drain well on paper towels. Serve warm, garnished with remaining green onion.
