Ingredients:
- 2 Tbsp. Olive Oil
- 3 Tbsp. Butter
- 1/2 c. Onion, 1/8 sliced
- 1 package Jimmy Dean Maple Roll Sausage, cooked, crumbled, drained
- 3/4 c. Red Bell Pepper, 1/4 dice
- 1 c. Milk
- 7 each Whole Eggs
- 7 each Tortilla, 8 inch
- 1 c. Colby Jack Cheese, shredded
- 2 Tbsp. Cilantro, fresh chopped
Directions:
Begin by heating 1 Tbsp. of olive oil and 2 Tbsp. butter in a saute pan on medium heat. Place the onion, sausage and red bell pepper in the saute pan and cook for 3 minutes. In a bowl mix the milk and egg together very well. Add the egg to the saute pan and stir continuously while the egg cooks. Should take approximately 5 minutes. Once the egg mixture is cooked divide the mixture among each tortilla. Sprinkle cheese and cilantro over the egg. Be sure to divide cheese and cilantro evenly among each tortilla. Roll the tortilla into a burrito and grill in a hot pan on both sides with 1 tsp. of butter and 1 tsp. of olive oil.
