Jimmy Dean Southwest Skillets Tortilla

Ingredients

  1. 12 flour tortillas (8-inch preferred)
  2. 1 pound of Monterey Jack Cheese, cut into 12 strips
  3. 1 can chili pepper, cut into 12 strips
  4. 18 oz pkge Jimmy Dean Skillets – Southwest flavor, sautéed to packaged directions (do not add eggs)

Sauce:

  1. 1 stick butter
  2. 1/2 cup flour
  3. 4 cups milk
  4. 3/4 pound sharp cheese, finely grated
  5. 1 tsp dry mustard
  6. 1/4 tsp red pepper
  7. 1/4 tsp black pepper

Directions:

Divide Skillets mixture into 12 equal portions. Place in center of tortilla, top with strip of cheese and strip of pepper. Roll up, place seam side down in a 9 x 13 inch baking pan.

Sauce Directions:

In a heavy saucepan over medium heat, melt butter and mix in flour, stirring until smooth. Add milk, then cheese, then seasonings. Stir (do not beat) until smooth and thick, over medium heat. Pour over tortillas.

Preheat oven to 350 F. Bake 45 minutes.

Serve with Picante sauce, Pico de Gallo, and or sour cream on the side
