Jimmy Dean Maple Sausage, Sweet Potato and Caramelized Apple Hash with Fried Eggs

Ingredients:

  1. 8oz Jimmy Dean Maple Bulk Sausage (browned, drained, and roughly chopped)
  2. 2 cups Gala apples; 1/2 inch cubed
  3. 2 cups sweet potatoes, peeled, 1/2 inch cubed
  4. 3/4 cup yellow onions, medium diced
  5. 1/3 cup granulated sugar
  6. 1 tablespoon olive oil
  7. 1 tablespoon butter
  8. Salt
  9. Pepper

Directions:

1. Place sweet potatoes in a medium saucepan and fill with water until potatoes are completely covered (about 1-inch over top of potatoes)
2. Generously salt water and bring to a boil over high heat; reduce heat and simmer for 5 minutes
3. Drain and set aside
4. In a medium saucepan, melt butter and sugar. Stir until no lumps are present and the mixture is a light caramel color
5. Add apples and stir until well coated
6. Simmer apples for approximately 10 minutes
7. Remove from heat when completely caramelized (there will be almost no liquid left in the pan)
8. In a 10-inch skillet, heat olive oil over medium heat
9. Add onions and sauté until translucent — approximately 5 minutes
10. Add sausage, apples and sweet potatoes
11. Sauté until heated through — approximately 1–2 minutes
12. Season to taste with salt and pepper
13. Serve with two fried eggs on top
