Jimmy Dean Sage Sausage-Crusted Pork Chops with Berry Sauce

Ingredients:

  1. 1 pkg Jimmy Dean Sage Roll Sausage
  2. 4 - 1" thick pork loin rib chops (6-7 oz each)
  3. Non-stick cooking spray

Berry Sauce:

  1. 1/2 cup seedless raspberry jam
  2. 2 Tbsp orange juice
  3. 2 Tbsp lemon Juice
  4. 1/4 cup dried cranberries
  5. 3 Tbsp roasted salted pistachio nuts

Stuffing:

  1. 1/2 cup Cranberries
  2. 1/2 cup chopped pistachio nuts
  3. 1 egg
  4. 1/4 cup bread crumbs

Directions:

Heat oven to 350F. Cut sausage roll into 8 slices. Spread one slice of sausage over top of each pork chop, evenly covering completely; turn chops; spread with remaining sausage slices.

Next, mix all of the stuffing ingredients in a bowl and slice the pork chop horizontally to open. Stuff the inside of the pork chop with the dressing and place in oven. Bake for 40 minutes or until thermometer reaches 155 degrees.

For the sauce, in a small saucepan combine jam, orange juice, lemon juice and cranberries. Cook over medium - low heat just until melted and heated through. Spoon sauce over pork chops; sprinkle with pistachios. Garnish with mint if desired.
