Jimmy Dean Sausage & Rice Jambalaya

Ingredients:

  1. 1 pkg. Regular Flavor Jimmy Dean Pork Sausage
  2. 1/2 lb. smoked sausage, sliced in 1/4" rounds
  3. 2 cans (14.5 oz. each) Cajun style stewed tomatoes
  4. 1 can (15 oz.) black beans, drained
  5. 1 cup water
  6. 1/4 teaspoon Louisiana Hot Sauce
  7. 1 bay leaf
  8. 1-1/3 cups instant rice
  9. 1/4 cup thinly sliced green onions (optional)

Directions:

In large saucepan or Dutch oven, cook Regular Flavor sausage over medium high heat, stirring frequently until no longer pink. Add sliced smoked sausage and continue to cook, stirring frequently 5 more minutes. Add tomatoes, black beans, water, hot sauce and bay leaf. Bring to a boil; reduce heat to low and simmer 30 minutes. Return to a boil, stir in rice, remove from heat and cover. Let stand 15 minutes before serving. Garnish with green onions if desired.
