Ingredients:
- 4 Tbsp. Butter
- 1 c. Yellow Onion, 1/8 inch sliced
- 8 Tbsp. Olive Oil
- 4 each Corn Tortilla
- 8 each Whole Eggs
- 1 tsp. Salt
- 1 tsp. Black Pepper, ground
- 1 package Regular Flavor Jimmy Dean Pork Sausage, cooked, crumbled, drained
- 1 1/2 c. Mexican Cheese Blend, shredded
- 1 c. Salsa
- 4 Tbsp. Cilantro, fresh chopped
Directions:
Method for one serving. Begin by heating 1/2 Tbsp. of butter in a saute pan over high heat. When butter is melted add the onion to the pan and saute until lightly browned (carmelized). Place off to the side when done. Heat 1/2 Tbsp. of butter in a saute pan over medium heat. Now place the corn tortilla into the pan and cook on both sides until lightly browned and crisp. Remove from pan and place on paper towel. Add 2 Tbsp. olive oil to the saute pan and heat for a minute. Place 2 eggs into the pan and cook till over easy. Season the eggs with 1/4 tsp. of salt and 1/4 tsp. of black pepper. Put the eggs on top of the tortilla on a plate. Next, add the sausage to the pan and reheat it for 4 minutes. Place on to the eggs. Sprinkle 1/3 cup of cheese followed by 1/4 cup of salsa, 2 Tbsp. caramelized onion and 1 Tbsp. of cilantro.
