&lt;ol&gt;
&lt;li&gt;1/4 cup Jimmy Dean Reduced Fat Pork Sausage (browned, drained, and chopped)&lt;/li&gt;

&lt;li&gt;1 whole wheat flour tortilla (10–12 in.) &lt;/li&gt;

&lt;li&gt;2 egg whites&lt;/li&gt;

&lt;li&gt;1 whole egg&lt;/li&gt;

&lt;li&gt;1/8 cup low-fat cheddar or part-skim mozzarella, shredded&lt;/li&gt;

&lt;li&gt;3 tablespoons pico de gallo&lt;/li&gt;

&lt;li&gt;4 slices fresh avocado&lt;/li&gt;

&lt;li&gt;2 tablespoons black bean purée (optional)&lt;/li&gt;

&lt;li&gt;Shredded lettuce&lt;/li&gt;

&lt;li&gt;Salt&lt;/li&gt;

&lt;li&gt;Pepper&lt;/li&gt;

&lt;li&gt;Non-stick cooking spray&lt;/li&gt;
&lt;/ol&gt;

&lt;p&gt;&lt;b&gt;Directions:&lt;/b&gt;&lt;/p&gt;

&lt;ol&gt;
&lt;li&gt;Warm tortilla in microwave for approximately 15 seconds&lt;/li&gt;

&lt;li&gt;Whisk together egg and egg whites in a small bowl&lt;/li&gt;

&lt;li&gt;In an 8-inch skillet that has been sprayed with nonstick cooking spray, pour egg mixture and scramble. Season with salt and pepper and put aside&lt;/li&gt;

&lt;li&gt;On first third of tortilla, spread a thick layer of black bean purée&lt;/li&gt;

&lt;li&gt;Next, layer on the scrambled eggs&lt;/li&gt;

&lt;li&gt;Place the sausage on top of the scrambled eggs&lt;/li&gt;

&lt;li&gt;Then layer on the pico de gallo, lettuce, and avocado&lt;/li&gt;

&lt;li&gt;Sprinkle with cheese&lt;/li&gt;

&lt;li&gt;Fold together&lt;/li&gt;

&lt;li&gt;Top with sour cream&lt;/li&gt;
&lt;/ol&gt;
