Jimmy Dean Bacon and Corn Chowder

Ingredients:

  1. 12 slices Jimmy Dean Fully Cooked Premium Precooked Bacon, heated according to package directions and diced
  2. 1 tablespoon butter
  3. 1 cup diced onion
  4. 2 cups water or chicken broth
  5. 1 pound potatoes, peeled and cut into 1/2" cubes
  6. 1/2 teaspoon salt
  7. 2 cups milk or half-and-half
  8. 4 cups cream style corn
  9. salt and pepper to taste
  10. 1 tablespoon chopped parsley (optional)

Directions:

Heat butter in a 3-quart saucepan over medium-high heat. Stir in onion and cook until translucent, 2-3 minutes. Add water or chicken broth, potatoes and salt. Bring to a boil, reduce heat to low and simmer, covered, until potatoes are tender, 15-20 minutes. Stir in milk or half-and-half and corn; simmer uncovered for 10 more minutes. Stir in bacon. Season to taste with salt and pepper. Serve hot; garnish with parsley if desired.
