  1. 1 pkg. Regular Flavor Jimmy Dean Pork Sausage
  2. 1 cup thinly sliced onions
  3. 1 cup thinly sliced green pepper
  4. 1/2 teaspoon oregano
  5. 1/2 teaspoon minced garlic
  6. 1 cup prepared spaghetti sauce
  7. 2 (12") Italian rolls, cut in half lengthwise
  8. 4 oz. mozzarella cheese, sliced
  9. crushed red pepper (optional)
Directions:

Cook sausage, onions, peppers and oregano in a large skillet over medium-high heat, stirring frequently until meat is thoroughly cooked and no longer pink. Stir in garlic and spaghetti sauce, reduce heat to low; simmer five minutes. Preheat oven to 375 F. Hollow out each roll with a knife, leaving a 1/2" shell. Fill rolls with sausage mixture. Cover with mozzarella slices. Bake directly on oven rack for 20 minutes. Serve whole, or for appetizers cut into 1-1/2" slices; sprinkle with crushed red pepper if desired.
