Jimmy Dean Sausage Gyros with Tzaziki Sauce

Ingredients:

  1. 1 - 16 oz Jimmy Dean Roll Sausage, Crumble sausage
  2. 1/2 crisp red apple (skin on), chopped
  3. 1/4 medium red onion, chopped
  4. 6 - 6 inch Pita Breads

Tzaziki Sauce:

  1. 8 oz sour cream
  2. 1 cup peel of English Cucumber, diced
  3. 2 Tbsp fresh lemon juice
  4. 2 Tbsp chopped fresh mint
  5. 1/4 tsp salt

Directions:

Tzaziki sauce: Combine all ingredients in medium bowl. Cover bowl tightly with plastic wrap and refrigerate until ready to use.

Sausage Gyros: Over medium heat, brown crumbled sausage in a large, 10 - 12 inch skillet sprayed with cooking spray, flattening with spatula while cooking. Warm pita breads, one at a time in large skillet coated with cooking spray until lightly browned on each side. Repeat with all breads, spraying lightly with cooking spray between each.

To assemble, spread 2 or 3 tablespoons tzaziki sauce on each pita bread. Top with crumbled sausage, apple and onion pieces. Fold over.

Notes: If English cucumbers are not available, regular will be fine. For a reduced fat version, substitute reduced fat sour cream.
